Late Breakfast...

Eggs, milk, cream, salmon, dill, and parsley or spinach.
( and just think, Max wondered what I was going to do with the cream).



Whisk up the eggs.

add the cream and milk.

Cook in a hot pan with oil or butter...
when it settles a bit, sprinkle over the salmon and dill.
Move it all around carefully, until it kind of puffs up,
 and looks like you want to eat it.

This is piled onto olive sourdough toast...
and it was just perfect with fresh coffee and a friend.
