Stuffed Chicken Thighs...



Grated zest of a Lemon, Basil, Parsley, Sumac and Coriander...mixed with a bit of lemon Juice.
Rubbed over the inner surface of a Chicken thigh fillet.

Add some Sun dried Tomato and Feta.

Roll up and wrap with a strand of Bacon
and bake in a medium oven for about 40 minutes,
delicious with Couscous.

Moroccan Style....

Today I watched a cooking show made by Yotam Ottolenghi,
 all about cooking in Morocco, it gave me inspiration to try something diffefrent.
Couscous, with Shallot, Garlic, Coriander and Cumin, with Golden Sultanas and Dried Cranberries.


Fish Balls,  made from Mackeral with Garlic, Preserved Lemon, Parsley, Tumeric, Chilli, Coriander and Cumin.
Simmered in a sauce made from fresh Tomato and Passata.

Just love my new Clay Pot, from the Oxfam shop,
it's a fair trade handmade and hand fired curry pot and stand from  Lombok...

Lamb For Dinner...

Slow pan fried with finely chopped Garlic, Parsley and preserved Lemon,
with a dash of Red Wine at the end
Accompanied by Mushrooms and Chinese Cabbage.

Tender and delicious.
