Stuffed Chicken Thighs...

Grated zest of a Lemon, Basil, Parsley, Sumac and Coriander...mixed with a bit of lemon Juice.
Rubbed over the inner surface of a Chicken thigh fillet.

Add some Sun dried Tomato and Feta.

Roll up and wrap with a strand of Bacon
and bake in a medium oven for about 40 minutes,
delicious with Couscous.
