Bamboo Shoots...

With Swiss Brown Mushrooms and a dash of Soy Sauce.
On my walk today I passed a clump of Bamboo and picked a few young stems.

It a bit of a job peeling the husk off.
But you end up with some tender green bits that are rather like Asparagus.
I cooked mine with Onion, Garlic and Ginger just saute with a little oil and water.
Quite delicious!.
