What's For Entree...Arancini...

Take  leftover Pumpkin Risotto, start forming it into balls, then put a square of cheese in the middle.
Dip in egg wash, and breadcrumbs, then deep fry till golden brown.
I served mine with a sprig of Vietnamese Mint and some home made Sweet Chilli sauce

Ready to eat...I ended up keeping them in a warm oven untill we came to the table.
