Glass Noodle Salad...

This a dish that I loved in Thailand, I've improvised a bit...
If you want the basics, just Google the recipe.

Made with 'Mung Bean' noodles, Herbs, Spring Onions and Shallots,
Black Fungus, Celery and Tomato...
Shrimp and Shejimi Mushrooms.
And of course Fish Sauce and Lime and Chili dressing.
