Asian Style Chili Mussels...

Make a sauce by frying some Garlic and Ginger in a pan. Add a teaspoon of Dry Chili.
Then some Peeled Diced Tomato, and then some finely chopped Coriander stalks.
Set aside.

Clean the Mussels, then boil them for about 2 minutes. in a covered saucepan with about half an inch of water dessertspoon of Soy Sauce , a teaspoon of Fish Sauce, and the juice of Half a lemon.
 Discard any Mussels that don't open, and add the open ones  to the sauce.
In the meantime cook some pasta (I've used Squid Ink Pasta), and when it's drained mix it all together,
 and finish with chopped Coriander leaves.

It was just delicious, and you have to really get into it, it's a dish that's kind of 'finger licking' so have a warm wet towel for the sticky fingers.
