Something for a cold night in....

Beef Casserole, with pumpkin and mashed potato...

And of course salad.

The makings of the salad, beautiful Fennel, Rocket and Cress, Red Capsicum, and Coss.
Washed and almost ready

The ingredients for the casserole.

Start by frying off the onion and garlic.

Add diced beef, osso bucco, and rosemary.

Brown the meat a bit then add the carrots.

I like to add a bit of lemon.

And tomatoes, and small onions, and red wine if you've got it.
And cook gently for ages. Adjust the seasonings as you go.

Peeling potatoes, ( You do have to go to the bother...it's a sign of love)
everyone loves mashed potato, it's a simple pleasure.

Ready to be cut up  and simmered, and  made into mashed potatoes....


Diced Jap Pumpkin, which is so sweet at the moment.

And when its all ready, sit down and enjoy a delicious warm winter meal.
Even better enjoy it with friends.
