Skin on chicken breast,
loosen the skin carefully,
and insert a mix of garlic onion rosemary and butter.
Pan fry carefully, start with a highish heat( and start skin side down)
then take it back to fairly low.
Keep an eye on it, make sure the thickest bit is cooked through.
Then serve with Rocket salad and some chutney.

The skin is beautifully brown and crispy. (The pinkish bits are actually red onion.) |
